Our First Sunday Dinner!

So we have been married for two weeks now. It's kind of crazy how fast time can fly. But We had our first Sunday Dinner with our little family. It was so meal. We were able to use our new dishes for the wedding. So thank you to those that got us the Fiesta Wear. We did go with the Colbat blue and the Sunflower yellow, we did have the Ivory but it just didn't look right in our kitchen. But on the menu we had Ribeye Stake with fresh green beans, bake potatoes, and salad. With our Stakes we don't have a grill so we cook them on our George Foreman.

Green Beans:
1-2 lb. fresh green beans
1 Tbsp. Butter
1 Clove of garlic minced

Place butter and garlic in sauce pan on medium hear until butter is melted.
Then add green beans and cook 5-6 minutes
Take off heat and enjoy.



It wasn't much but, our little family loved it. Here is to many more Sunday Dinners and the years to come. Enjoy!

THE FLU SHOT!

What can I say about a flu shot, I HATE SHOTS. Okay so it's not that bad to get a flu shot, I think I just scare myself when it comes to needles. There really are not that bad. And when you have friends with you to get the flu shot it's not so bad. I did have a fun time at my office getting a flu shot.
They did have a little heath fair with it. At our health fair there were a lot for fun things to do. Like we got our blood pressure taken ( I was a little high but a lot better then I have been in the pas.t)
We had the change to get our body fat and Digital Scale Readings, and let me tell you they can tell you not only your Weight in pounds but your Body fat (this was a different body fat test), your body water %, Muscle mass, physique rating 1-10 (the higher the number the better). M.B.E. (Basal Metabolic Rate) for those of us not in the medical field that is how many calories your body burns off a day, your Metabolic Age, and your Visceral Fat that's belly fat.
We learn more about sugary drinks and the kind of fat you should have. We did get some fun stuff with the fair. So give the health fair a try. Yes there may be thing you don't want to know, but in the end they could save your life and your family could enjoy more time with you.
So all in all we did have fun getting our Flu Shot. It is hurting a little but that's our body at work so we don't get sick.

11 Days Away

I can't believe it the time has gone by so fast. It feels like just yesterday I met the love of my life and now in 11 days we will be married. There is so much that still needs to be done. But it will get done. We order the cake that's the good news and I just put the last of the wedding invitations in the mail ( yeah they are getting out kind of late.) And our umbrellas will be in at the end of the week. I'm working on different cupcake recipes to try the week as well so I'll have a post a day on a cake cup. I've started to write a love note a day to Johnny, and will be giving it to him the before the wedding for him to read. I hope it will all go well and if not it was fun planing a wedding. So here is to the next 11 Days of being the Bride-To-Be!

Meal's of the week

Roasted Herb Chicken:
4-6 bone-in chicken (I used legs and thighs)
2 Tbsp. EVVO dived. 
1 tsp. dry Basil 
1 tsp. dry Rosemary 
1 tsp. garlic salt
1 lb baby carrots
8 medium red skin potatoes (cut in to 1/4)
1 medium yellow onion (cut in 1/4)
 Place foil in 9 x 13 pan, place 1 Tbsp. EVVO and chicken in pan. In medium bowl add basil, rosemary, and garlic salt. In a large bowl add carrost, potatoes, and onion, mix with basil, rosemary, and garlic salt, and 1 Tbsp EVVO. Place over chicken, cook at 425 F for 45-50 min. 


Roasted Herb Chicken with Veggies


Chicken and Dumplings
1 can of 8 biscuits
1 lb of chicken bone-in
2 Tbsp. Chicken flavoring
9 cup of water

Boil chicken in water until cooked. While chicken is cooking cut biscuits in to 8ths. When the chicken is cooked take out of water and sheared. In water mix in chicken flavoring, add cut bisuits and sheared chicken. Cook for 15-20 min. Let cook for 10 min and enjoy!
Chicken and Dumplings 

Let it be know that I may be a good cook, but there are many things I still burn. Take cooking anything in a Crock Pot. For some reason I have burned everything, this recipe that I tried was easy and to the point. I just for got to plug it in and let it cook but once I plugged it in I turned it on high and forgot about it until the next night. And well a picture say a 1000 words, so I'm going to try this again and put a new picture up.

Slow Cooker Baked Potato Soup
♥ Prep time:  20-30 mins
♥ Cook time:  5-10 hours
♥ Serves: 10-12
A creamy concoction simplified in the slow cooker!
Ingredients
  • 5 lbs russet potatoes, peeled & diced into 1/2 inch cubes
  • 1 medium yellow onion
  • 5 teaspoons minced garlic
  • 1 tablespoon Spike Seasoned Salt
  • 4 – 14.5 oz. cans of chicken broth (58 oz. total)
  • 6 oz. water
  • 2 – 8 oz. packages of reduced fat cream cheese, softened
  • optional: chopped cooked bacon, shredded sharp cheddar, & diced green onions for garnish
Directions
  • Add diced & peeled potatoes to the crockpot; along with the onion, garlic, seasoning, and broth.  Stir to combine.
  • Cook in the crockpot on high for 5-6 hours, or on low for 9-10 hours.
  • After cooking time is completed, add both blocks of the softened cream cheese and blend together very well using an immersion blender. (ANOTHER METHOD: you can also blend it in batches in a blender if you do not have an immersion blender).
  • After combined, stir well with spoon.
  • Serve with above listed garnishes, or alone.

Wedding Plans 219 Days to go!

So we have 219 day to go and things are going well. We have book out venue at the Log Haven in Millcreek Canyon. I have my dress, the tuxes are pick out and order, we have our rings. and I have found my bridesmaids dresses. But I was out and about and found these dresses as a joke to show my bridesmaid a their dresses. And I love them, just not for my wedding. SO here are is the text I sent out to my bridesmaids.

Hey guys I was out and about today and came a cross these dresses and fell in love with them for your  bridesmaid dress...what do you think!
and the loving friends they were like "OH how cute" and "I love them." Then my best friend who is the Matron on honor was like, "OMG Laurie the are UGLY....can I just go in my bar and panties...love you and your style, but this dress really..well it's your wedding and I'll where the dress you pick out."

My sisters and I were laughing so hard, I'm sure I peed a little. But then I sent them the really dress what looks like this. It's a back picture and doesn't do the dress justice but I fell in Love with these ones and they are the right color and on Sale!

I love this dress, it was to small for the top part of me, but way cute!
Luckily I have the biggest chest and I will be the one wearing white.
This will be our little flower girl and her dress and it was on sale!

This will be the tuxes the Groomsmen will be wearing.

256 Days To Go!

Well this weekend was a great Success. I have 256 day to do until I get married to my best friend! And I can't wait for that day to come. Well on the top note I have found my dress, and it was on sale for 70% off. yes it's last years line but boy oh boy did I fall in love with this dress! Yes it's the one. Now I know that all that shopping was well worth it. After trying on dress after dress and by the the tenth store I was about to cry because I just couldn't fine my dress. But when I was at Kathleen's Bridal in Kaysville it was like the dress just jumped out at me. It was a little to small but it was the dress. There are some things I'm going to change on it. Like the back is a zip up back but I wanted a corset back, and I need a jacket to go over it, easy fix. and I just need to put some pockets in it.  But all and all it is now my dress.. The Dress....I was looking for. I would put a picture up, but I don't want my Fiance finding out what it looks like until the big day. It is a great day here in the Land of Laurie. Well I'm off for now!

267 Days To GO!

Well now it just feels like the time is flying by. Some days it feels like the wedding plans are going great but then there are days when it feels like nothing is going well. On Monday I went and tried on some wedding dresses...well all I can say is if that is how dress shopping is going to be I would rather not go at all. But I have learned I can't go shopping when I am not feed. I am not always a happy camper. But I'm going to give it another try. Who know I might be able to find "THE DRESS" I'm looking for...as long a the weather her gets better. We would up with Freezing Rain, not the funnest thing to drive in. I'm not sure how people back east and in the mid west do it (you all are AMAZING!)

Sunday Dinner for One?



I love Sundays, they are one of my favorite days of the week. Not only do I get to spend time with the Family. My friends and I have game night as well. But then there is time to bake and cook new things and for this last Sunday I make a lovely helping of Couscous, grilled chicken, and a nice Cesar salad. I also made a some of my "Crack Chocolate Chip Cookies"

Couscous:
2 cups couscous
4 tbs butter
2 cups water
2 Cans chicken borth
1 medium tomato
1 small zucchin
1 small yellow onion



Crack Chocolate Chip Cookies:
2 1/4 Cup flours (sometimes I use one cup white and one cup wheat)
1 Sick Butter, Softened
1 1/2 cups sugar
1 tsp baking powder
2 eggs
2 Cups Chocolate Chips ( I use 1 cup milk chocolate chip 1 cup white chocolate chip)
ball up and cook at 350 F. for 8 minutes each.

Guess Who Is Getting Married?



After being with my loving boyfriend of fife months, on our fifth month anniversary he popped the question. It was something I was not expected. It Was one nice snowy night in Utah. He started off by picking me up from work with some flowers, and the had a clue. He had a lovely saying to go with it. One of his favorite things to do when he was little was to go on scavenger hunts. So what fun was it when he told me I would have to find him. Not know what was really going on I played along.

The clues lead us to many of our first.
Our first dance at the Union Station in Ogden.
Our first kiss at my house.
The first time we meet and talk at a church activity up in Jackson Hole Wyoming. (But we just drove to the church we went to.)
The first time he realized he wanted to date me, and fell in love with me at the Bountiful Temple.
Our first date at Nightmare on 13th.
We ended the hunt at Temple Square where he took me to the Reflection Pond and that is when he got down on one knee and asked me to marry him. I said yes of course.
Then we were off to dinner at Robintino's.

We have set the date as October 18, 2013. We will see what the universe throws at us, and all I can say is bring it on...(just kidding). But really it's going to be a fun time planing the wedding.
So now we just have the wedding to plan. It will be a long and short 275 days. What 275 days left crazy. Until next time.
